The Science of Pizza

Start by following your expert chef into the kitchen to make what seems like a very simple and ordinary dish: pizza. Deceptively simple in practice, making pizza involves complicated and fascinating science. Garnished with the colors of the Italian flag, the pizza Napoletana is the most quintessential of pizzas. According to legend, it was created for Queen Margherita of Savoy during her visit to Naples in 1889, and little has changed about this perfect pizza since. Using a texture analyzer, discover how a culinary scientist performs an extensibility test, then learn a low-tech version that you can do right in your kitchen at home. You can choose just the right combination to create your ideal pizza dough through careful analysis of flour, sheer force, time, and consequent extensibility.

Most pizza dough requires the help of gluten and yeast to rise to chewy perfection, and we ll return to the lab to consider these critical components of pizza dough. While the gluten in dough determines the physical properties that allow dough to stretch as we mix, it is yeast that provides leavening and flavor. This single-celled fungus, usually Saccharomyces cerevisiae, or brewer s yeast, acts through time and fermentation for bold flavor profiles and thick, chewy crusts. You ll learn the correlation between time and flavor to see why some restaurants keep their pizza dough in a cooler for up to five days before baking.

With the science of both gluten and yeast in mind, you can begin to experiment with your own dough, creating pizzas with bold flavors, textures, and aromas. As a bonus, your expanding understanding of gluten and yeast will inform your other baking, including a wide range of bread, from whole-wheat loaves to perfect naan.

A Perfect Chicken Dinner

What can I make tonight? Is there something easy, delicious, and savory that my family will love, but that is still great for guests and special events? Yes! Roasted chicken always rises to the occasion. Elegant enough for company, but inexpensive enough for every day, the humble chicken seems to do it all if you know how it s done. Chef Kahlenberg takes you to the kitchen to share the secrets of restaurant chicken. Learn to prepare your bird, from tying and seasoning to carving and serving. Discover what restaurants do to ensure that chicken is moist and evenly roasted; what sides pair well with chicken; and how to prepare those sides from scratch, including carrot pur e, broccoli, pan gravy, and sherry gastrique.

Once you understand how to create an unparalleled chicken dinner, turn your attention to the science that underlies the magic. Paella Mixta

Originally cooked and served in a wide, shallow pan called a paella, this essential dish of Spain traces its roots to the Spanish city of Valencia on the Mediterranean coast. The mixta, or mixed paella, combines short-grain rice, meat, seafood, sausage, and vegetables and is colored by vibrant yellow saffron. This is Spanish comfort food at its best. Let Chef Kahlenberg show you the essentials of paella: a base of slow-cooked vegetable sofrito, short-grain rice cooked into a pie in flavorful broth, seared meat, and vegetables lightly cooked to retain their color and texture. You will even learn the best way to cut an artichoke! Season your paella with a little salt and pepper, and garnish with chopped parsley. Call your family to the table and serve dinner straight from the pan, with a slice of lemon. Let this home-cooked fare bring you together, a fast favorite in every family.

When you have finished your meal and cleaned up (just one pan!), return to the lab to learn more about starch and vegetables, two critical components of paella. Eggs are simple, but their presence in cooking is pervasive and vital. Join Chef Kahlenberg in the kitchen to learn how to prepare a divine and rustic tortilla espa ola, a light and savory Gruy re and Parmesan cheese souffl , and a world-class salmon benedict with creamy b arnaise sauce. Whether served for brunch, dinner, or anything in between, all three recipes are sure to please the most discerning palates. If you once considered yourself more an aficionado of food rather than an artist of cuisine, these three dishes represent a graduation into the culinary majors.

Most store-bought eggs appear uniform in size and shape. This appearance is deceptive. Different eggs, often of different ages, possess a pH ranging from seven for the newly laid to nine or even nine and a half in eggs that are a few weeks old. Return to the lab to witness experiments that will expand your understanding of egg texture and viscosity and how they are affected both by the pH of the egg and the presence of potatoes and oil in our tortilla espa ola.

Texturally, a b arnaise sauce and a souffl could not be more different. Incredibly, they are both made of eggs. In our final episode, learn that the integration of either lipids, in the case of the b arnaise, or air, for the souffl , determines their structure. Keep your souffl from collapsing and your b arnaise sauce from breaking by getting a deeper understanding of the nature of eggs.

Nevertheless, Hannibal defined a critical period in Roman history and ancient history, more broadly plowing across the Italian peninsula with a cadre of foot soldiers, elite cavalry, envoys, and even elephants. His army laid waste to many strategically important cities; utilized intelligence networks to deter powerful Roman allies along the route; and triumphed in key skirmishes against formidable Roman generals and the impressive armies they commanded, triggering wave after wave of public outcry and panic back in Rome.

But when we peel back the legend, what s left? What do we know and what can we accurately say about the famed Hannibal Barca? Where did he and his family come from, and why did they and their fellow Carthaginian countrymen war repeatedly with Rome? How did the Carthaginian army manage to devastate the Italian peninsula so thoroughly in the Second Punic War? And perhaps most importantly why did Hannibal and his army ultimately fail in their long and impressive fight against Rome?

Answer these questions and more in the 15 lectures of Hannibal: The Military Genius Who Almost Conquered Rome, which detail the legendary Carthaginian commander s historic conquest of Rome from Italy to Iberia. Eve MacDonald, Senior Lecturer in Ancient History at Cardiff University, will be your expert guide. While the course centers on Hannibal and his remarkable incursion into Italy and Iberia, it also deals with his world a complex social and political ecosystem both like and unlike our own. You will begin with the rise of Carthage, a powerful port city-turned-empire that dominated the Mediterranean. From there, you will

Learn about the founding of Carthage by the Phoenicians and study its later ascent;
Get to know the prominent local figures that came before Hannibal, such as his father, Hamilcar Barca, a skillful military tactician and fighter in his own right;
Understand the factors that led to Carthage s initial collision and conflict with Rome;
Reconstruct the first of three Punic Wars, a military conflict that would shape the young Hannibal s life; and
See how Carthage contended with Hannibal s many victories on the Italian Peninsula alongside grave and sustained losses in Iberia and North Africa.
You will also head west to explore Rome before Caesar and Augustus, zeroing in on the state of its military and its politics in the age of Hannibal. As you study the First and Second Punic Wars from the Roman point of view, you will dive into how ordinary and elite folk alike reacted to one particularly skilled Carthaginian s threats to Rome s control of the Italian Peninsula. You will venture on an exploration of wartime culture and way of life in the Roman capital and be introduced to the cast of characters involved in Rome s war against Carthage, including commander Flaminius and the influential Scipiones family.

That s not all, though. In tracking Hannibal s movements across Italy and Carthage s incursion into Iberia, you will also get to explore the city-states that dotted the ancient world from Capua to Syracuse. This tour will help you paint a picture of each polity s culture, politics, military, and way of life. As you investigate the fragile allegiances that connected each to Rome or to Carthage, you will also see how partnerships broke down and how war between two great Mediterranean powers remade life wherever it reached. Ultimately, you will emerge with a much fuller and more detailed picture of what Hannibal s world was truly like.

The Man, the Myth, the March

You will spend the most time, however, getting to know Hannibal himself how he grew up, what he is most famous for, and what became of him and his homeland after the conclusion of one of the most impressive and important military conquests in history. In Hannibal: The Military Genius Who Almost Conquered Rome, you will dive into many facets and events of Hannibal s life, including

Childhood. Hannibal grew up in a city at war with Rome, and, as a teenager, he even accompanied his father and brothers on military expeditions westward. See how Hannibal s childhood and upbringing primed him for a life of not only military service, but also long-term conflict with Rome.
Family. Hannibal s father and brothers were important military strategists and commanders in their own right. Get to know the Barcid family and their important contributions to the First and Second Punic Wars.
Politics. Legend says that Hannibal s hatred of Rome often blinded and ultimately betrayed him in the Second Punic War. Determine how true that was and examine how Hannibal navigated fragile political partnerships with former Roman allies, tense political situations within Carthage, and peace negotiations with an increasingly desperate but very stubborn Rome.

Monarch Butterflies: In most cases, the monarch butterfly only lives in its adult butterfly form for a few weeks, just long enough to complete the reproductive process. The generation of monarchs that migrates, however, is an important exception to this rule. These monarchs live some eight times as long as the generation that preceded theirs. And as small and delicate as they are, they re strong enough to fly from southern Canada all the way to their wintering grounds in Mexico.
Leatherback Sea Turtles: These turtles can maintain a body temperature of around 79 degrees Fahrenheit despite the conditions around them something no other living reptile can do. How? Rather than generating heat metabolically via internal core body functions, leatherbacks generate it kinetically through the constant pumping of the muscles that power their massive flippers. Because of this, some leatherbacks can even be found north of the Arctic Circle.
Screech Owls: One way to spot these tiny, elusive owls is to look for mobbing songbirds. When a group of songbirds locates a screech owl (or any owl, for that matter), they ll gather all around it, alarm calling and swooping close to the owl. When songbirds mob like this, they re trying to scare off a potential ambush predator by letting it know that its cover has been blown. Screech owls, however, tend to be indifferent to these mobs if they aren t actively hunting.
Salamanders: An underappreciated group of animals, salamanders are actually some of the most common and numerous types of vertebrate wildlife in many of our ecosystems. In fact, if you added up the biomass from salamanders in many eastern forests, it would equal the biomass of all the other vertebrate wildlife of all species living in that forest. So why are salamanders so infrequently seen by most people? Because they live in places out of sight to us, including underwater like where the giant hellbender salamander lives.

Wild Tales of Struggle and Survival

But what exactly is mindfulness? And is it the same as meditation? If you re picturing people sitting cross-legged on the floor with blank minds and chanting with blissful smiles on their faces, you may misunderstand what mindfulness practice looks like.

While meditation is integral to creating mindfulness, it has nothing to do with emptying your mind. Rather, you can think of it as a pause button in your day, a time to concentrate on your breath, an image, or a word.

A Pastime of Their Own: The Story of Negro League Baseball is your chance to delve into this fascinating history. Taught by Professor Louis Moore of Grand Valley State University, these 12 scintillating lectures take you onto the field, through the locker rooms, and into the smoky back rooms of the business world in Chicago, New York, Philadelphia, Kansas City, and other great American cities.

Although little is known about the game before the Civil War, the story of Black baseball players, teams, leagues, and businesspeople mirrors the social history of America from the 1850s through World War II. For instance, you might be surprised to learn that in the era of Reconstruction, baseball was an integrated sport. The game was particularly important for Black Americans working for self-determination and you could often find pickup games at Juneteenth celebrations in the 1860s and 1870s.

But as Reconstruction gave way to Jim Crow, so, too, did an infamous gentleman s agreement segregate baseball into white and Black teams hampering athletes but opening doors to Black businesspeople seeking economic success around the game. Among other topics, Louis introduces you to

Legends like Bud Fowler, Rube Foster, and Gus Greenlee who took their knowledge of the game and applied it to the business of ball;
The best teams in Black baseball, such as the Philadelphia Pythians and the Kansas City Monarchs;

Some of the best players to ever set foot on a baseball diamond, including Oscar Charleston, Moses Fleetwood Walker, Larry Doby, and many others.

A Pastime of Their Own: The Story of Negro League Baseball gives you a fast-paced survey of this magnificent story.

Play Ball! Reconstructing the Origins of Black Baseball

As America s pastime, baseball has symbolized many things: the spirit of competition; the good cheer at friendly neighborhood gatherings; the mobility of a growing nation; and the autonomy of individual players, managers, and owners to assert their independence and find a place in the American economy.

For Black Americans newly emancipated after the Civil War, baseball was a perfect vehicle to prove their merit in a nation transformed. Although the game was integrated in the Reconstruction years, you can find a foreshadowing of segregation in the manner in which late-19th-century media covered the sport.

As Louis lays out, only Black media covered Black games. One of the first box scores ever recorded was the 1859 matchup between the Henson Club of Jamaica Long Island and the Unknowns of Weeksville, Brooklyn. The only reason we know about this game is thanks to the Weekly Anglo-African newspaper.

Despite the lack of fanfare, Black ball quickly moved from a regional activity to a national game, with teams all over the country.

Batter Up! Building the Leagues of Their Own

The promise of equality in Reconstruction soon gave way to the passage of Jim Crow and segregation laws. In baseball, white team owners quietly laid out a gentleman s agreement in the 1880s never to allow a Black man to play in the major leagues leading to a parallel history of Black and white baseball, with segregated fields and segregated teams.

Within this tragic story, however, Louis shows the innovations and resilience of Black ball players and businesspeople. In this course, you will meet people like Bud Fowler, one of the best players in the nation who led an early effort to create a professional Black baseball organization in the late 19th century.

In the early 20th century, Andrew Rube Foster Black baseball s first true superstar built a successful team based on his style of play ( small ball ). He then went on to create the Negro National League, which served as both a way to solve the economic challenges of owning a baseball team and a symbol of Black social and economic progress.

Soon, thereafter, rival Ed Bolden created the Eastern Colored League, and the two Black baseball leagues lifted up the game but faced challenges during the Great Depression.

Grand Slam! The End of an Era

As you will discover throughout this survey, the story of Black baseball reflects the larger history of America. When the Depression clobbered the nation, league owners and team managers struggled to make ends meet. Players had to forego paychecks.

Yet time and again, Louis draws out a story of triumph over tragedy. Out of this era rose some of the greatest players in the game, including Josh Gibson (commonly referred to as the Black Babe Ruth ), Satchel Paige (one of the most successful and famous players in the Negro Leagues), and Oscar Charleston (manager and first baseman extraordinaire).

Following the Depression, World War II changed everything, highlighting the color line in America s pastime and the equal worth of Black citizens. With urging from the Black press and the undeniable talent in the Negro Leagues, white major league owners recognized integration was inevitable.

Louis explores the story of Jackie Robinson and then Larry Doby breaking through the color barrier changing baseball forever. It was truly an end of an era, and a triumphant finale to A Pastime of Their Own: The Story of Negro League Baseball.

On the PCT, you will brave every extreme of landscape and climate imaginable, from desert to glacier and everything in between. At the heart of this trail is the El Capitan, a 3,000-foot granite rock face taller than any human structure ever built.

Called the A-to-Z trail because it starts in Arches and ends in Zion, the remote and challenging route of cliffs and canyons of the Hayduke Trail is the elite hiker's dream. Its 812-mile route links six National Parks, including the Grand Canyon. Hiking the Hayduke is not as easy as saying your ABCs. Some of the fascinating details that Mick highlights in this course

It was founded 25 years ago by two hikers, Mike Cornella and Joe Mitchell, to thread together multiple parks.
It has been described by National Geographic Adventure magazine as the greatest hike in the United States.

Ocean Views and Unfinished Business

A difficult and relatively new trail, the Pacific Northwest Trail (PNW) has much less inland hiking. Instead, you hike along saltwater bays, islands, and even the ocean. With a fantastic range of wildlife habitats along the way, from wolves to whales, this trail has excitement galore for any nature enthusiast, especially one who prefers solitude you can go for days seeing more bears than people.

When you undertake the 1,200-mile journey of the PNW, you will cross

Seven mountain ranges,
Seven national forests,
Three states, and
Three national parks.
The Continental Divide Trail (CDT) arguably the most rugged, remote, and hazardous of them all boasts 3,100 miles and an ominous origin story involving a cook bludgeoning a trail builder to death for criticizing his cooking. The CDT is known as the "wild child" of the trail family, since it is only 70% fully completed, with lots of road walking and off-trail travel involved. Designated as a National Scenic Trail in 1978, a map created by the Forest Service is available. Maps are also available of the ever-changing route forged over the years by trailblazing thru-hikers who made their way with compass and map and published their paths in guidebooks, articles, and online.

Journey to the Past

The Great Allegheny Passage (GAP) is a relatively short, mild trail from Pittsburgh, Pennsylvania, to Cumberland, Maryland. At just 150 miles long, the hike is not a test of endurance on wild and impossible terrain; rather, it is more a trip into America's past, with urban landscapes and wide, well-kept paths easy for hikers and perfect for bikers.

From the very first step, the GAP oozes history, spanning the story of the country's founding and the dawning of the Industrial Age to the region's rebirth, providing a destination for more than a million adventure enthusiasts every year. It boasts historic towns and attractions such as Ohiopyle, an 18th-century settlement, and "The Ruins Project," a mosaic museum.

The Appalachian Trail (AT) is known to be the most social hiking trail in the United States, although there is enough solitude on the trail if that's what you're seeking. In terms of name recognition, the AT is as well-known as Mount Everest. The "twin" to the Pacific Crest Trail in the west, it is one of the most established and famous trails of them all. Traversing over 2,100 miles through 14 states, the AT attracts over 3 million hikers, yearly.

Scholars, today, describe it as not Tibetan, not a book, and not about death.

Lifestyles. Many Tibetans have lived as nomads for thousands of years, playing an important role in the creation of the Silk Road about two centuries before the Common Era. Food. Given that vegetables are so difficult to grow at such altitude, meat and animal products are the most important dietary staples. You ll learn about yakmo milk, butter, cheese, and yogurt, and the national delicacy of momo dumplings.

Tibetan Buddhism

More than 2,500 years ago, a prince named Siddhartha Gautama lived in today s northern India and Nepal. Raised with every luxury, he left his palatial life as a young man to pursue the spiritual life, searching for a way to rid the world of suffering. Eventually, he became enlightened, and, for the rest of his life, he taught the philosophy he had discovered. He was known as the Buddha, the Awakened One. Today, more than 500 million people follow his teachings and practice Buddhism worldwide.

Buddhist teachings made their way to Tibet, influencing nearly all aspects of Tibetan life. Tibet s alphabet and grammatical system are derived in part from Buddhist-influenced scholasticism in India. Over the centuries, Tibetan Buddhism developed a distinct tradition all its own, reflecting the influences of India and China, as well as the area s Indigenous religious traditions such as B n.

To better understand the importance of Tibetan Buddhism in the history and culture of the entire region, Professor Kassor will lead you through topics such as

The Great Dharma Kings. Buddhism flourished when Tibetan kings encouraged and supported the practice. Those who are most remembered for helping to establish Tibetan Buddhism are Songtsen Gampo, Trisong Detsen, and Ralpachen. But these men were not gods, and you will learn how the dissemination of Buddhism was influenced by their earthly loves, scholastic interests, and the specific teachers they chose to bring from India.
The Practice of Merit. Merit is a type of spiritual good fortune that can help Tibetan Buddhists along their religious path both in this life and the next. Two of the most common merit-making activities for Tibetan Buddhists are circumambulations, walking around holy places, and prostrations.
Sutras and Tantras. Tibetan Buddhist teachings and practices can be divided into sutras, instructions that can be taught to any practitioner, and tantras, philosophically complex, esoteric teachings that are usually only shared with highly trained and skilled meditators.
The Dalai Lama

Even most people with little real knowledge of Tibetan history or religion are familiar with images of Tibet s long-time leader, the fourteenth Dalai Lama. Although he humbly describes himself as a simple Buddhist monk by the name of Tenzin Gyatso, his role in Tibetan history, even world history, reveals a man who came to be the political and spiritual leader of his people at a very difficult and challenging time. In Tibet: History, Culture, and Religion, you will learn about the significant role he has played with respect to

The Government of Tibet. The fourteenth Dalai Lama assumed his office as the formal leader of Tibet at age 15 in 1950, just one month after the People s Republic of China sent troops into Tibet to peacefully liberate the country. In 1959, the Dalai Lama and thousands of Tibetans were given asylum in India, and the Dalai Lama began leading the Tibetan government in exile.
World Peace Efforts. As leader of Tibet, the Dalai Lama proposed a Five-Point Peace Plan for Tibet that was rejected by China. In 1989, he was awarded the Nobel Peace Prize for his long-time, non-violent struggle for the liberation of Tibet.
Future Dalai Lamas. In 2011, the Dalai Lama formally transferred his political leadership to a democratically elected leader, while retaining his spiritual leadership. Since China has formally outlawed the practice of reincarnation, it is unclear whether Tibet will see a 15th or subsequent Dalai Lamas.

So, when and where did writing first emerge? Why did early humans find it necessary to record their thoughts in a visual medium? How did cultures that had relied solely on spoken language for thousands of years create symbols that could carry meaning? And how did all the many scripts and systems that developed over the centuries lead us to the 26-letter alphabet of the English language?

Embark on a journey to the very beginning of writing as a tool of language and see how the many threads of history and linguistics came together to create the alphabet that forms the foundation of English writing. The Birth of Writing

If humans lived for tens and perhaps hundreds of thousands of years as a species with spoken language yet without writing, why was writing developed? We may speak about writing and literacy in lofty terms today while simultaneously taking it for granted but the truth is the earliest writing systems came about for limited uses that would gradually expand over time. The earliest known form of writing, cuneiform, began as a simple way to keep accounts, before it developed into a more abstract system of symbols that represented sound. Egyptian hieroglyphics likely took their inspiration from Mesopotamian cuneiform and were a hybrid of pictograms (symbols directly representing tangible things) and phonetic complements (symbols that represented sounds).

These early systems show the progression of writing from directly representative to a more abstract form that used symbols for sounds rather than objects or ideas, though neither ever progressed to a full alphabet-based system. Hieroglyphics did, however, likely influence the creation of the earliest known alphabet, which would in turn greatly shape the way languages like Aramaic and Greek would build their writing systems and influence languages around the world.

As Professor McWhorter shows you the development and evolution of writing systems, you will go on a sojourn across continents and through time to see how many seemingly unrelated languages share elements that can be easy to miss. With this foundation in place, you will be ready to embark on a fascinating journey through the creation of the English-language alphabet and see how the many threads of writing development can converge in unexpected ways.

Know Your ABCs

To better understand the development of the alphabet, you will look at multiple aspects of language, both as it is written and as it is spoken. Professor McWhorter breaks down his examination of the alphabet by focusing on letters in an order he believes is most crucial to understanding their historical and linguistic roots, highlighting the key elements you need to trace the origins and gradual transformations of these deceptively simple symbols. As you follow along, you will have the opportunity to consider the answers to some of the big questions of language, such as

If the shape of a letter is completely abstract and has nothing to do visually with the sound it represents, how do letters come to look the way they do?
Why do the sounds letters make change over time? Why do things like vowel shifts happen while the symbols effectively stay the same?
Why does the alphabet have a set order when the order is effectively arbitrary? How was the order established and why does it stay the same over time?
How are some letters able to represent completely different sounds based on their placement in a word? Why does a letter like C exist when we already have S and K to make its respective sounds?
What can writing systems teach us about the history of the people that developed them? What traces of culture and geography can we uncover when we look at the evolution of the written word?
How did punctuation first develop?
These and other questions highlight not just how arbitrary or abstract much of our language use is, but they also help us understand the development of language itself and its connection to the culture and social conditions of its origins. The only way to truly understand why our writing systems operate the way they do is to look at where they come from and how they have been altered again and again as they have converged, transformed, and branched over time.

A History in Letters

So, what does the development of the alphabet tell us about language? Aside from the simple pleasure of understanding the roots of one of our most used tools of communication, the origins of the alphabet highlight a key element of language: connection. As peoples and cultures have encountered one another over the centuries, their languages have deeply influenced each other both directly and indirectly.

Very few writing systems were built from the ground up and in isolation. Instead, nearly every script was inspired and influenced by others, revealing the ways humans have always influenced one another across the ages. Language barriers certainly exist, and yet the thousands of languages spoken and written around the world share ancestors and key features that can be traced through every era. From the very beginning of its development, writing has had the unique dual role of recording history on the page and encoding it within its own symbols and structures.

As you will see throughout Ancient Writing and the History of the Alphabet, the alphabet is not the result of careful planning and perfect efficiency. Rather, it is the product of a multiplicity of human interactions and chance encounters, from trade and migration to slavery and war, and everything in between. Some letters have straightforward origins, while others have gone through spectacular and unpredictable transformations. As you trace the movements and evolutions that helped shape the writing we use today, you will have the opportunity to see language in a whole new way, one that connects us in ways you may have never realized.

Historians believe it wasn t until the sixth century AD that hops began to appear in beer. The Benedictine nun Saint Hildegard of Bingen hypothesized the bitterness of hops as having useful preservative effects on beer and she was right.
Doppelbock: This classic German beer has its roots in monastic traditions. During the so-called Dark Ages, monasteries took up brewing on a large scale, including St. Gallen in present-day Switzerland, which became the first truly large-scale brewery in Europe. The brewing operations alone involved hundreds of monks, servants, and students.
Cream Ale: Homegrown American beer styles were pushed to the margins during Prohibition, but some, like the cream ale, survived. This style emerged in the 19th century as a competitive alternative to German-brewed lagers and combines established English ale traditions with the crispness and lightness of the (then new) lager craze.
Rauchbier: One style of beer in which you can clearly taste the importance of geography in beer brewing is Rauchbier, or smoked beer. Still made in places like the Schlenkerla brewpub in south-central Germany, these beers are probably one of the few ways you can get a sense of the smokiness most pre-medieval European beers would have had.
Whether you re learning about the first written records of beer from ancient Mesopotamia, the influence of alewives on popular conceptions of witches, the rise of English pub culture and multinational brewing corporations, or even recent brewing trends like minimally invasive fermentation, this course will captivate you with every lesson and every sip.

Masterclass - Painting a Baja Fairy Duster

In this Masterclass, I'm painting a Baja Fairy Duster from start to finish. This started out as a commission to create a bookmark for Desert Survivors Nursery in Tucson. I decided to record the entire process so that I could show you how I painted it. The flowers of the Baja Fairy Duster are an eye-catching shade of bright red that is a hummingbird magnet. In this illustration I painted the flower buds, the full flower, the spent flower and the seed pods - basically the entire flower-cycle.
I painted this in Acrylic Gouache, but the technique is 90% the same whether you are using Traditional Gouache, Casein, Acrylic or Acryla Gouache.
After finishing the painting, I scanned it and brought it into Adobe Photoshop so I could crop it, add text and prepare it for export to the Printers to make the printed bookmarks. I give you a brief glimpse into this process, although a full blown lesson is Photoshop is best left for its own freestanding class.

As you read this sentence, your brain has just processed about 20 million bits of information. In fact, every second of every day, your brain processes about 11 million bits. And yet, that astonishing number just isn t enough to get you through your day. Consequently, your brain takes some shortcuts and it s those shortcuts, called heuristics, that make it all work.

Some shortcuts are completely benign and helpful such as your ability to recognize your child even if half his face is in shadow or your ability to imagine tomorrow even though you will never actually see it. But other heuristics are faulty and can bias your decision-making inappropriately. In Understanding Cognitive Biases, you will learn how to recognize these biases for what they are, counteract them when necessary, and even use them to your advantage in some instances.

In 24 fascinating lectures, Dr. Alexander B. Swan uses examples from psychology experiments, history, politics, movies, TV, comics, social media, and more to illustrate dozens of cognitive biases that affect us all. You re not alone in your sometimes irrational judgments and interpretations of events or people. But you can learn how to make better decisions no matter what shortcuts your brain wants to take!

How Many Biases?

Although it might come as a shock, research shows that each of us has close to 200 biases. Unlike a prejudice, which usually means a preconceived negative opinion about a group or class of people, you can be biased in favor of something or against it. For example, you might be biased toward healthy foods, the color blue, or a certain type of music. We each have our own preferences that are unlikely to cause any negative effects in our decision-making.

The shortcuts of cognitive biases, however when the brain fills in gaps of solid, reliable information with a lot of guesswork for efficiency s sake can lead to errors of memory and judgment, and can cause faulty decision-making with unintended, even dire, consequences. For example, take confirmation bias. This tendency to consider only information that confirms our existing beliefs can cause us to make incorrect assumptions about the cause of a coworker s behavior, misinterpret experimental data, or even make disastrous engineering decisions resulting in injuries ... or worse.

In this course, you will explore the causes of confirmation bias, our use of stereotypes, our predisposition toward the status quo, and many more biases, including some you may have never heard of

Pareidolia. This is our tendency to perceive meaning from vague and random stimuli. Our brains are primed to find patterns, especially faces. In 1976, when the Viking 1 spacecraft photographed the Cydonia region of Mars, many people s pareidolia caused them to see a face in the landscape that became associated with a supposed Martian civilization.
Cryptomnesia. This is a tendency for a person to believe they created a particular thought or idea when the actual source was a memory. This occurs when your brain makes a source monitoring error storing a memory without storing its source. One of the most famous examples of cryptomnesia is Helen Keller s publication of The Frost King; although she was sure her book was an original work, it was not.
Reactance. Remember back to your teen years when you wanted to do the opposite of whatever you were told to do? Although you didn t know it at the time, you were exhibiting reactance bias, the tendency to act in ways that are opposite to the rules in place, especially when you believe your freedom will be curtailed. One of the problems with this very common bias is that your reactance could lead you to do something unsafe; sometimes, the rules are there for a reason.
Unraveling the Bias

If these cognitive biases are such an ingrained aspect of our brain functioning, can we have any control over them? Absolutely. In Understanding Cognitive Biases, Dr. Swan will discuss many tactics you can and should use to avoid the consequences of unchecked cognitive biases. These include

Increasing Your Awareness of Biases. We need to be aware of cognitive biases and recognize them when they show up. It s amazing how easy it is to identify cognitive bias when it s exhibited by someone else, but it s much more difficult to recognize it in ourselves. However, this is an important first step in fighting off faulty reasoning and associated outcomes.
Slowing Down. Humans use dual process thinking. We have fast, automatic, and heuristic processing to keep us moving efficiently from one thing to the next, which is where most of our cognitive biases show up. But we can also access slow, deliberate, logical processing if we want to. Are we motivated to look for solid, valid information outside our own belief system, even if it takes a bit of effort? Or are we content to just confirm our own worldview, whether or not it s accurate?
Journaling. For those who journal, and those who have been wanting to try this wonderful habit, writing down some of your activities, thoughts, and concerns can be a great way to combat cognitive bias. For example, journaling during a multi-day vacation can help unravel the peak-end bias that affects how we retain memories; having group members journal their individual experiences and thoughts can help work against groupthink; and journaling every day can also help prevent the creation and maintenance of false memories.
Using Cognitive Bias to Accomplish Your Goals

Some of the heuristics your brain uses to make up for its slow processing can also be used to help you reach your goals. These include

Testing Effect, Generation Effect, and Spacing Effect. Understanding how to use these memory phenomena to your own benefit can help improve your studying and learning and increase memory retention.
Observer Bias. The next time you re trying to teach someone anything at all, you can certainly use the cues of observer bias where we see what we expect rather than what is necessarily there to improve response and learning.
Status Quo Bias. While this bias can sometimes work against us by making us afraid of change, we can also use it to examine situations closely and choose the status quo when it really is to our benefit.
Dr. Swan leaves the course asking one final and impactful question. Once you understand how many cognitive biases work in our lives (biases that sit quietly in the dark ), their evolutionary causes, and their many potential negative impacts, where do you want to go from here? Do you want to allow the status quo bias to keep every other cognitive bias in place or, with your new knowledge, do you want to begin working on strategies to mitigate and reduce their impacts? The choice is yours.
