epub | 18.7 MB | English | Meredith Leigh | 2020 | New Society Publishers; 2 edition | Page: 320

Book Description :

A delicious alternative to the status quo when it comes to how we farm, cook, and eat
Nutrition, environmental impact, ethics, sustainability - it seems like there's no end to the food factors we must consider. At the center of the dietary storm is animal-based agriculture. Was your beef factory farmed or pasture-raised? Did your chicken free range, or was it raised in a battery cage? Have you, in short, met your meat?
Most efforts to unravel the complexities of the production and consumption of animals tend to pit meat eaters and vegetarians against each other.
In this 2nd edition of The Ethical Meat Handbook, Meredith Leigh argues that by assuming responsibility for the food on our fork and the route by which it gets there, animals can be an optimal source of food, fiber, and environmental management. This new edition covers:
  • Integrating animals into your garden or homestead
  • Step-by-step color photos for beef, pork, lamb, and poultry butchery
  • 100+ recipes for whole-animal cooking
  • Culinary highlights: preparing difficult cuts, sauces, and extras
  • Charcuterie, including history, general science, principles, and tooling up
  • The economics and parameters for responsible meat production.

Eating diversely may be the most revolutionary action we can take to ensure the sustainability of our food system. The Ethical Meat Handbook 2nd Edition challenges us to take a hard look at our dietary choices, increase self-reliance, and enjoy delicious food that benefits our health and our planet.

Book Description :

The second book in The French Cook series, following The French Cook: Sauces, classically French trained author Holly Herrick dips into the marvelously versatile world of choux pastry, or pâte à choux. The buttery, nutty, even-flavor of this dough invites myriad flavors, in both sweet and savory categories and in many shapes - cream puffs, éclairs, rings, and more.
Whether it be a savory petit éclair filled with an avocado mousse layered with bacon and tomatoes, choux "gnocchi" with a buttered herb sauce, three cheese gougères with black pepper, a sweet Dreamsicle orange cream puff with a dark chocolate sauce, a salted caramel macadamia ice cream filled profiterole with a warm caramel sauce, an Almond Joy cream puff, or a hot-from-the-fryer beignet with a cool, fresh raspberry sauce, taste delights are found all along the way. Holly also provides tips and recipes for assembling classic cream puff cakes such as the croquembouche and Gâteau St. Honoré.
Holly dedicates the front of the book to the art of demystifying the "puff," making choux pastry an easy and accessible medium for every cook, novice, professional or anyone in-between. There is a chapter on sweet sauces to go along with the sweet cream puffs and éclairs and expert tips on piping, baking and garnishing these uniquely French delights.

Book Description :

Master the art of classic French sauces.
The French Cook: Sauces is the first in a series of French cookbooks that will simplify and demystify French cuisine for all of those who love it and would like to bring it home to their American kitchens without traveling outside their homes.
In her latest book, Holly Herrick creates a kind of French cooking course all about sauces, filled with beautiful how-to photography and step-by-step technqiques that will have you making sauces like a pro. The book focuses on the five mother sauces of French cuisine: béchamel, veloutés, hollandaise, espagnol and brown sauces, and les sauces tomates. In addition, Herrick devotes chapters to fonds, or stocks, the base of so many sauces, and mayonnaises, a simple, versatile sauce so widely used in classical French cuisine. In addition to the sauces, the book integrates main course ingredients, such as steak or roasted chicken, something more than to be dressed with a sauce, but also something that helped to shape the sauce itself. With myriad variations and derivatives on each basic sauce, this book will help turn your next meal into a veritable French feast.
Holly Herrick is a graduate of Boston College and recipient of Le Grande Diplome in Cuisine and Pastry from Le Cordon Bleu, Paris, France. A long-time resident of Charleston South Carolina and multi-awarded restaurant critic and food writer, she is the author of five cookbooks, including Southern Farmers Market Cookbook, The Charleston Chef's Table Cookbook, Tart Love - Sassy, Savory and Sweet, and The Food Lovers' Guide to Charleston and Savannah. epub | 14.1 MB | English | Holly Herrick | 2014 | Gibbs Smith | Page: 130

Book Description :

Holly Herrick loves France and French cooking. And in this cookbook ( her third in The French Cook series), she jumps into bowl after bowl of glorious French soups with inspired abandon and a generous dose of classical technique.
Le Cordon Bleu trained chef and former resident of France focuses on the nuances and techniques for expertly layered flavors. Beginning with stocks, she continues with cold soups, classic soups and ste, creamy soups, and consommes in ensuing chapters, each one as delicious as the next.
Similar to sauces (Herrick also penned The French Cook: Sauces), soups are the ideal conduit for creating maximum texture and flavor. Only, with soups and ste, the cooking canvas is much broader and there is a precise yet playful emphasis on presentation and garnishes.
Whether a sumptuous French Onion Soup topped with croutons and bubbling Gruyere, or a riff on a classic sauce in the creamy, velvety Soup Soubise topped with fried shallots, all you need to know about making perfect French soups is neatly tucked between 128 beautiful pages.

pdf, epub | 4.85 MB | English | Treasa De Loughry | 2020 | Palgrave Macmillan; 1 edition | Page: 227

Book Description :

This book examines how contemporary global novels by Salman Rushdie, David Mitchell, Rana Dasgupta and Rachel Kushner have evolved new aesthetics to represent global economic and ecological crises. Paying close attention to the interrelations between postcolonial, world, and global literatures, this book argues that postcolonial literary studies cannot account for global crises that exceed the national and anti-colonial. Advocating an interdisciplinary framework informed by a synthesis of materialist literary theory with world-systems theory, combining Fredric Jameson and Georg Lukács with Giovanni Arrighi and Jason W. Moore, this book examines how global literatures metabolise not only socioeconomic conditions, but also transformations in the world-ecology, and emergent developmental and epochal crises of capitalism.

Book Description :

New York Times Bestseller
Named "22 Essential Cookbooks for Every Kitchen" by SeriousEats.com
Named "25 Favorite Cookbooks of All Time" by Christopher Kimball
Named "Best Cookbooks Of 2016" by Chicago Tribune, BBC, Wired, Epicurious, Leite's Culinaria

Named "100 Best Cookbooks of All Time" by Southern Living Magazine

For succulent results every time, nothing is more crucial than understanding the science behind the interaction of food, fire, heat, and smoke. This is the definitive guide to the concepts, methods, equipment, and accessories of barbecue and grilling. The founder and editor of the world's most popular BBQ and grilling website, AmazingRibs.com, "Meathead" Goldwyn applies the latest research to backyard cooking and 118 thoroughly tested recipes.

He explains why dry brining is better than wet brining; how marinades really work; why rubs shouldn't have salt in them; how heat and temperature differ; the importance of digital thermometers; why searing doesn't seal in juices; how salt penetrates but spices don't; when charcoal beats gas and when gas beats charcoal; how to calibrate and tune a grill or smoker; how to keep fish from sticking; cooking with logs; the strengths and weaknesses of the new pellet cookers; tricks for rotisserie cooking; why cooking whole animals is a bad idea, which grill grates are best;and why beer-can chicken is a waste of good beer and nowhere close to the best way to cook a bird.

He shatters the myths that stand in the way of perfection. Busted misconceptions include:

Myth: Bring meat to room temperature before cooking. Busted! Cold meat attracts smoke better.

Myth: Soak wood before using it. Busted! Soaking produces smoke that doesn't taste as good as dry fast-burning wood.

Myth: Bone-in steaks taste better. Busted! The calcium walls of bone have no taste and they just slow cooking.

Myth: You should sear first, then cook. Busted! Actually, that overcooks the meat. Cooking at a low temperature first and searing at the end produces evenly cooked meat.

Lavishly designed with hundreds of illustrations and full-color photos by the author, this book contains all the sure-fire recipes for traditional American favorites and many more outside-the-box creations. You'll get recipes for all the great regional barbecue sauces; rubs for meats and vegetables; Last Meal Ribs, Simon & Garfunkel Chicken; Schmancy Smoked Salmon; The Ultimate Turkey; Texas Brisket; Perfect Pulled Pork; Sweet & Sour Pork with Mumbo Sauce; Whole Hog; Steakhouse Steaks; Diner Burgers; Prime Rib; Brazilian Short Ribs; Rack Of Lamb Lollipops; Huli-Huli Chicken; Smoked Trout Florida Mullet -Style; Baja Fish Tacos; Lobster, and many more.

azw3 | 13.02 MB | English | Richard Dawkins | 2009 | Free Press; Reprint edition | Page: 484

Book Description :

Richard Dawkins transformed our view of God in his blockbuster, The God Delusion, which sold more than 2 million copies in English alone. He revolutionized the way we see natural selection in the seminal bestseller The Selfish Gene. Now, he launches a fierce counterattack against proponents of "Intelligent Design" in his New York Times bestseller, The Greatest Show on Earth.

"Intelligent Design" is being taught in our colleges; educators are being asked to "teach the controversy" behind evolutionary theory. There is no controversy. Dawkins sifts through rich layers of scientific evidence-from living examples of natural selection to clues in the fossil record; from natural clocks that mark the vast epochs wherein evolution ran its course to the intricacies of developing embryos; from plate tectonics to molecular genetics-to make the airtight case that "we find ourselves perched on one tiny twig in the midst of a blossoming and flourishing tree of life and it is no accident, but the direct consequence of evolution by non-random selection." His unjaded passion for the natural world turns what might have been a negative argument, exposing the absurdities of the creationist position, into a positive offering to the reader: nothing less than a master's vision of life, in all its splendor.

pdf, azw | 3.22 MB | English | Leo Heaps | 2020 | Sapere Books | Page: 269

Book Description :

An account of heroism and courage in one of the Allies' biggest military catastrophes of the Second World War. Ideal for readers of James Holland, Anthony Beevor and Cornelius Ryan.

Ten thousand Allied troops landed in the Netherlands in September 1944.

This was the largest airborne invasion ever undertaken and it ended in utter disaster.

Eight thousand men were killed, wounded, or captured during the Battle of Arnhem.

Yet, what of those who escaped?

And how did they manage it when surrounded by German troops?

Leo Heaps' remarkable book The Grey Goose of Arnhem charts the activities of two hundred and fifty men who, with the aid of Dutch Resistance, made it back across the Rhine to Allied lines.

As a member of the First Airborne, Heaps dra from his own experiences as a soldier who fought, evaded capture, and then returned to work with the Dutch Resistance, for which he was awarded the Military Cross, as well as using material from private diaries, letters, and intervie with about forty paratroopers and Dutch Resistance leaders to record a thorough account of the most amazing mass escape of World War Two.

These men never gave up in the face of insurmountable odds. Indeed, as Heaps explains, rather than stay within the safety of allied lines, some of these men returned to the frontlines to assist the Resistance and ensure that as many of their comrades returned as possible.

The Grey Goose of Arnhem is a brilliant account of heroism that weaves together the accounts of numerous unforgettable characters to provide insight into what the Battle of Arnhem and its aftermath was like from those who saw it first-hand.

"Heaps' narrative of the captures, escapes and evasion (including his own) after the battle is well constructed. ... The tension of the moment is tautly recreated. The conclusion is exciting and rewarding. It is a valuable addition to the record of the gallant First Airborne Division." Infantry Journal

Book Description :

The turn of the third century CE―known as the Jian'an era or Three Kingdoms period―holds double significance for the Chinese cultural tradition. Its writings laid the foundation of classical poetry and literary criticism. Its historical personages and events have also inspired works of poetry, fiction, drama, film, and art throughout Chinese history, including Internet fantasy literature today. There is a vast body of secondary literature on these two subjects individually, but very little on their interface.
The image of the Jian'an era, with its feasting, drinking, heroism, and literary panache, as well as intense male friendship, was to return time and again in the romanticized narrative of the Three Kingdoms. How did Jian'an bifurcate into two distinct nostalgias, one of which was the first paradigmatic embodiment of wen (literary graces, cultural patterning), and the other of wu (heroic martial virtue)? How did these largely segregated nostalgias negotiate with one another? And how is the predominantly male world of the Three Kingdoms appropriated by young women in contemporary China? The Halberd at Red Cliff investigates how these associations were closely related in their complex origins and then came to be divergent in their later metamorphoses.

Book Description :

Incorporating elements from history, science, philosophy and international relations theory, this book takes a fresh look at the life and thought of Robert Oppenheimer.
The author argues that not only are Oppenheimer's ideas important, engaging and relevant, but also more coherent than generally assumed. He makes a convincing case that Oppenheimer has much to say about 21st century issues, and his voice should be brought back into the public forum.
The book recovers and reconstructs what Oppenheimer said and wrote during the 1940s, 50s and 60s (i.e., his hope and vision) with the goal of identifying what might be of general philosophical interest today. It considers not only Oppenheimer's thought, but also his life using philosophical ideas developed by contemporary philosophers.
In addition, to deepen and broaden the discussion and demonstrate the relevance of Oppenheimer's vision for the present, the author analyzes his vie using contemporary international relations theory with a special emphasis on nuclear nonproliferation and disarmament. This examination reveals ways in which Oppenheimer's reasoning was prescient of current work being carried out to control, and possibly move beyond, the nuclear revolution.
